I’m Trying To Eat Clean Y’all

I’m trying really hard, but processed food is so good. Turning down junk food isn’t too difficult except when it comes to sweets! But I’m practicing moderation and really focusing on what I eat MAJORITY of the time. For the most part, I’ve been eating really healthy. I’ve been eating breakfast everyday, cooking dinner, and taking lunch with me to school. But I find myself slipping from time to time. I never beat myself up for it though, especially since I’ve been working out 6x a week. I just know that if I could really buckle down on this clean eating thing, I’d be seeing the body I want real soon. 

Side note: why is peanut butter so delicious? I’ve almost eaten a whole jar in a week! My go to pre or post workout snack is a slice of toast with peanut butter, banana, and honey. Or a simple PB&J sandwich. 

Anywho, I looked at my before pictures and I can clearly see that my body is changing, but I feel like my stomach isn’t going anywhere and that, of course, is the one thing I really want to get rid of. As of now I do cardio 3x a week, but I think I’m gonna do a lil cardio everyday. We’ll see if I can manage it with my strength training workouts. 

I’ve been thinking about this blog and how disconnected I’ve been recently. I used to look to tumblr, or more specifically fitblr, for motivation, new ideas, and guidance for how to be healthy. But now that I have a better sense of what being healthy means and I no longer need as much motivation because I’ve developed healthy habits, I find myself spending less and less time here. I will always acknowledge how much the fitblr community has helped me in my journey to lose weight and become a healthy individual though. And I hope to be motivation for others, which is my main reason for keeping this blog active. But I can honestly say I no longer NEED this blog and that’s a great feeling.

Guilt Free Frozen Apple Nut Butter Sandwiches!

Hey everyone! Hope you’re enjoying your week :) so I did a quick little snack recipe today.

You know on those hot summer days when you wanna just sit in your backyard or the park and pop open a good book? Well we all know that nothing goes better with the hot summer weather than a good scoop or ice cream or a popsicle.

But hey, I’d rather look good than to put something yucky into my body, so here’s something you should totally try instead! You can freeze these little bites so they’re ALMOST like a healthy fruity version of an ice cream sandwich… except much better for you. Also, you’ll be getting a good amount of belly filling, muscle building protein and healthy fats!

Ingredients:

- 1 apple, sliced thinly

- almond/peanut/any nut butter 

Directions:

Slice up your apples, spread the nut butter in a thin layer, sandwich the slices together and pop into the freezer  for at least an hour to set and freeze over!!

Yum!

Raspberry Yogurt Parfait!

Reposting this recipe because I think it looks a lot better this way!

This morning was one of those “I’m going to make something effortlessly pretty” days in the kitchen :)

The fridge was horribly bare and empty and I had to look in the deep freeze to see what I had to chow down on. Luckily, I found some frozen organic raspberries I bought a few weeks ago so I decided to make use of that + some of the greek & regular yogurt I had left.

There is absolutely no cooking in this recipe and it’s a fantastic breakfast/dessert :) 

Ingredients:

All the amounts in this recipe really vary depending on the container you’re putting it in but all you really need is:

- a few cups of raspberries

- some greek or regular yogurt

- honey

- chia seeds (optional)

I actually subbed out greek yogurt for regular yogurt about halfway through this recipe because I thought it would make it way too rich if I used greek yogurt for the whole thing so yeah. Not pictured here though!

Directions:

First of all, toss your raspberries into a blender or processor and if they’re as tart as mine were, they needed a bit of honey (and because the greek yogurt/yogurt is unsweetened, you need this!) and process until you’ve got raspberry “crumble” that will thaw out nicely later!

Then you just keep layering!! Raspberry -> Yogurt -> Chia and repeat! I garnished with a few mint leaves just because I’m that picky about presentation :) and there you go!

Oh & if you have LEFTOVER raspberries blended up already, squirt a bit of lemon juice, and toss it back in the freezer for a little bit and you’ll have a SORBET! Yum :)
